At the age of 15, our chef began his culinary journey in the kitchen of a Western restaurant, where his passion for cooking was first awakened. In 2001, he moved to Miyakojima, Okinawa.
In 2003, he returned to Tokyo to train at an Italian restaurant in Ginza. Two years later, he went back to Okinawa and opened his own café on a remote island. In 2008, he joined the Shigira Bay Resort Hotel in Miyakojima, Okinawa, where he was part of the team that launched four new restaurants.
In 2010, he was appointed as the chef to the Ambassador at the Japanese Embassy in Sweden and relocated to Stockholm. After completing his tenure at the embassy in 2013, he further refined his skills by training at Michelin-starred restaurants Rutabaga (one star) and Matbaren (two stars).
In 2014, he moved to Singapore to continue his culinary career in Japanese cuisine. He later contributed to the opening of modern European restaurant 999.99 in 2015, and in 2017 joined Japanese-Italian restaurant Café B as Chief Advisor.
In 2019, he was appointed Ambassador of Higashine City, Yamagata Prefecture. In 2022, he opened Masa Saito Innovative in Singapore as owner-chef.
